Lindsay Dingman Baker came home to Converse to help revitalize the downtown area. She sees BBQ as a communal food, that brings people together for a shared dining experience. Lindsay is dedicated to sourcing local, high-quality proteins for her menu offerings and enjoys teaching guests what it truly means to ‘support local’. The pork used on the menu is raised 7 miles from the restaurant. The beef raised and served on the menu is raised 15 miles from the restaurant. Lindsay takes her team on an annual farm tour, allowing them to see where the food comes from that is served to the guests at Jefferson Street BBQ. This allows the team to describe to customers the relationship that Lindsay has with her producers – highlighting the care and attention that is put into their products. Jefferson Street BBQ has a rotating seasonal menu which is artfully smoked daily with house rubs. They also offer a full catering menu with delivery up to 70 miles from Converse. Even the hickory used to smoke their meats is locally sourced! Jefferson Street BBQ just celebrated 10 years of being a woman owned restaurant and catering business located in Converse, IN. Lindsay has some exciting plans for 2023, and we can’t wait to see her continued success!
