Tuscany Potato Soup

1 lb. Italian Roll Sausage

2 Tbsp. olive oil

1 medium onion, chopped

1/4 tsp. black pepper

1/4 tsp. red pepper flakes

1 can (48 oz.) chicken broth

4 diced potatoes

1 bunch fresh kale, washed, chopped into pieces

In soup pot, add olive oil, crumble and brown sausage over medium heat until sausage is browned. Add onions and saute for 3-4 minutes longer. Add salt, peppers, broth and potatoes. Bring to boil and immediately turn down heat to simmer. Simmer for 10 minutes, add kale. Cover and simmer for additional 10 minutes.
