True Kimchi – Fort Wayne, IN

Samantha (Sam) Yim learned how to make kimchi from her mother, using a family recipe. Sam wanted to share her love of not only kimchi, but her Korean heritage, so she began producing small batch, handcrafted kimchi in 2018 selling at farmer’s markets and pop-up events initially. 

Due to popularity of her products, she opened a store front location in 2022 which also offers Korean snacks and provisions. True Kimchi sources much of their produce within 30 miles of where it’s grown. Seasonality and supporting local are important to Sam, which allows her to have strong ties to her farmers. True Kimchi offers a variety of kimchi flavors, allowing customers to enjoy this traditional side dish based on their spice preference.
