1 tsp. dried basil

4 cups stale French bread cubes

4 oz. Risin’ Creek Creamery garlic and herb goat cheese

1 cup shredded mild cheddar cheese

2 scallions, thinly sliced

2 Tbl. red bell pepper, minced

1 cup pulverized Charlie’s Premium Pita Chips with Sea Salt

1/2 cup crumbled cooked Indiana Kitchen hickory smoked bacon

1/4 cup Eisele’s natural honey

1/2 tsp. coarsely ground black pepper

Heat oven to 350 degrees F.

In a large bowl, combine milk, yogurt, eggs, oil and basil. Add bread and toss to coat well. Allow to set for 30 minutes, tossing occasionally. Fold in knobs of goat cheese, cheddar cheese, scallions and bell pepper until evenly mixed.

Spoon mixture equally into (8) greased non-stick mega muffin cups. Combine crushed chips and bacon. Spoon on top of mixture in each muffin cup. Bake for 30-35 minutes or until lightly browned on top.

Combine honey and black pepper. Drizzle over top of each serving. Makes 8 individual bread puddings.
