Hoosier Apple-Yogurt Coffee Cake

Hoosier Apple-Yogurt Coffee Cake

Ingredients
2/3 cup sugar
½ cup Healthy Hoosier Canola Oil
2 eggs
1 tsp. vanilla
1 ¼ cup ground rolled oats (start with 1 2/3 cups oats arid grind in blender or food processor)
1 cup all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 cup Traders Point Creamery Plain Yogurt
2 cups finely chopped, peeled cooking apples
½ cup chopped nuts
½ cup packed brown sugar
1 Tbsp. butter or margarine, melted

Instructions

In a large mixing bowl, beat together the sugar and canola oil. Add the eggs and vanilla. Beat well.

Combine oats, flour, baking powder and baking soda. Add to beaten mixture alternately with yogurt, beating after each addition till the mixture is just combined. Fold in the apples.

Divide batter between two greased and floured 8×1½-inch round baking pans

Mix the nuts, brown sugar and melted butter or margarine. Sprinkle over batter in pans.

Bake in a 350 degree oven for 30 to 35 minutes or till done.  Cool coffee cakes in pans on wire racks. Serve warm or cooled.
