• 4 tsp olive oil
• 1 C fresh sweet corn kernels blanched
• 1 C fresh blueberries.
• 1/4 C chopped sweet red onion
• 2 TB chopped fresh cilantro
• 1/2 medium jalapeno pepper, seeds and membrane removed, and finely minced
• Juice of 1 lime
• Zest of 1 lime
• salt and black pepper, to taste

Combine before serving- enjoy!
