• 2 TB olive oil
• 2 TB fresh lime juice
• pinch of kosher salt
• fresh black pepper, to taste
• 2 C shredded chicken, cold
• 1/4 C chopped cilantro
• 3/4 C salsa of your choice
• 1 ripe avocado, peeled and
chopped
Combine first 4 ingredients in a medium bowl, stirring with a whisk.
Add chicken and cilantro; toss to combine.
Gently fold in salsa and avocado.
